Some simple soups for the cooler weather – my children LOVE these and they are very inexpensive and filling! Easy potluck crockpot meal too!

Zuppa Tuscana (Olive Garden soup)
1 (16 ounce) package smoked sausage or bulk sausage, whatever you like – Italian sausage is good too – browned and drained
2 potatoes, quartered, and cut into 1/4-inch slices
1 chopped onion
1 1/2 teaspoons minced garlic
2 cups kale – washed, dried, and shredded
2 tablespoons chicken bouillon powder
1 quart water
1/3 cup heavy whipping cream

1. Brown the garlic and onion with the sausage, add the potatoes, water and bullion
2. Simmer 10-15 minutes until the potatoes are just done
3. Turn heat down, add the kale and as soon as it is wilted, and tastes tender, turn the heat off.
4. Add the cream and serve immediately with pepper and shredded cheese as desired.

Chicken Tortilla Soup
1 cup chopped onion
a few stalks of celery, chopped (optional)
1 Tablespoon minced garlic
a little olive oil to saute the onion and garlic
3 cups chicken broth (or water and bullion)
1 (14.5 ounce) can Mexican diced tomatoes
Taco seasoning to taste (or cumin, salt and chili powder)
1 or 2 cooked chicken breasts cubed small
a cup or two of frozen corn (however much you have or like)

1. Saute the veggies, add in the other ingredients and simmer a few minutes til the ingredients mix and corn is cooked.
2. Keep warm in the crockpot or serve immediately.

Serve over tortilla chips, topped with:
shredded Mexican cheese blend
minced fresh cilantro
sour cream
slices of lime

They sound wonderful! I love soups! Particularly because we can usually get a couple of meals out of them! Thanks for sharing!

Hi, just checking out your blog and found soup recipes. That’s great because I was just needing one for church. Our church has soup fellowship after the evening meal once a month and I’m bringing some. Such blessings to find this on your blog – thanks.
